Introduction
When you need a portable, satisfying snack that doesn't involve turning on the oven, these Strawberry Protein Bites deliver. Rolled oats, sunflower seeds, and Juice Plus+ Strawberry Complete are blended together in a food processor before being rolled into neat little balls and coated in bright, tangy freeze-dried strawberry powder. They are nutrient-dense, naturally sweetened, and last up to a week in the fridge—making them the ultimate meal-prep snack.
Ingredients
-
1 cup fresh strawberries
-
1 cup gluten-free oats
-
½ cup sunflower seeds
-
1 serving Juice Plus+ Strawberry Complete
-
2 tbsp coconut oil, separated (1 tbsp + 1 tbsp)
-
¼ cup freeze-dried strawberries
Directions
-
Place the fresh strawberries, oats, sunflower seeds, Juice Plus+ Strawberry Complete, and 1 tbsp coconut oil in a food processor.
-
Mix until the mixture comes together and starts to form a ball. If it seems too dry, add the second tbsp of coconut oil.
-
Crush the freeze-dried strawberries into a fine powder using the food processor or a pestle and mortar. Spread onto a plate.
-
Roll the mixture into 1-inch balls using your hands, then immediately roll each ball in the strawberry powder to coat.
-
Store in the fridge for up to 1 week, or freeze for up to 3 months.
Pro Tip: Slightly damp hands make rolling much easier and prevent sticking. If your mixture won't hold together, try refrigerating it for 20 minutes before rolling—this firms up the coconut oil and makes shaping easier.
